I am always sad for the end of the school year. I do not say it enough to them, but I am grateful to our teachers. All teachers, everywhere. I think those of us who are not teachers, cannot begin to know how much of their talent, time and self a teacher gives to his/her students and community.
This year I am thanking my teachers with a twist: a do-it-yourself muffin! I gave them the ingredients & supplies to make a "Muffin in a Mug." They can make it on their break as it takes a few minuets to mix and then one minute in the microwave!
I delivered the baskets today. They loved the idea and one had even heard of this and was wanting to give it a try.
I will list the recipe at the end of this post.
I did make them a thank you card as well. The teacher's desk cut file is from SVG Cutting Files.
Here is the basket loaded with supplies for a Muffin Break. I pre-measured all the dry ingredients, substituting sugar for honey. Placed that in one container. I used a smaller container for the coconut oil. I provided one un-cracked egg. You can leave an egg sit out for up to 8 hours without refrigeration. I supplied the mug and a fork for mixing. (The teachers will keep the dishes and fork. Yeah thrift store.) I cannot wait to hear if their muffins were a success. I have tried this 4 times. Two of the 4 times I was met with success.

CHOCOLATE MUFFIN IN A MUG
Ingredients
1 egg
1 1/2 T golden flax meal
1 1/2 T almond flour
1 T, heaping of unsweetened cocoa powder
2 tsp honey (or other sweetener)
1/2 tsp baking powder
1 flat T coconut oil (liquid or solid)
Directions
Crack 1 egg in to mug. Whisk.
Add 1 1/2 T golden flax meal
Add 1 1/2 T almond flour
Add 1 T, heaping of unsweetened cocoa powder
Add 2 tsp honey (or other sweetener)
Add 1/2 tsp baking powder
Add 1 flat T coconut oil (liquid or solid)
Stir vigorously
Microwave for 1 Minute (trust it)
